Recently I discovered how easy it is to roast things. Obviously I was out of the loop. First I conquered Butternut Squash, a new-found favorite, then it was asparagus.
Tonight, it is chickpeas and then red potatoes.
I love crunchy, salty snacks. And when I have a bag of potato chips in front of me…I really can’t help myself! My love of all things salty and crunchy probably comes from my dad. He, and the dog, can down a whole bag of potato chips in one sitting!
So, as a healthy alternative to chips, and to feed my desire for something salty when snack time roles around a 4pm each day, I decided to try roasting chickpeas. And they couldn’t be easier or yummier! They are nice and crisp and have the perfect salty taste to them. Plus chickpeas are a great source of protein, something that I never seem to eat enough of.
French fries, like potato chips, are another thing I cannot control myself around. Admittedly they are my weakness. Basically any thing in french fry form I can get behind. Roasting potatoes are a great way to get my fix, without all the calories and fat.
Tonight, I am roasting them with a spicy chipotle seasoning. I love adding ground chipotle pepper to things. Ranch dressing, mayo…it spices things up but with a nice and smoky taste that gives lots of flavor without being too hot for me to handle. These potatoes have a bit of a kick to them but paired with a simply cooked chicken breast are a great side dish.

1 15 oz can Chickpeas, drained and rinsed
1 tsp Kosher Salt
1 tsp Garlic Salt
Pre-Heat oven to 350°
Spray baking sheet with cooking spray
Spread drained and rinsed chickpeas out on the pan
Sprinkle with various salts
Bake chickpeas for 45-50 minutes. Every 15 minutes shake the pan to evenly roast
Yields 4, 1/4 cup, servings
Roasted Red Potatoes with Spicy Chipotle Seasoning (adapted from Eating Well)
1 1/2 lbs Red Potatoes, washed, halved or quartered depending on how big you want your pieces
4 tsp Olive Oil
1/2 tsp Kosher Salt
1/2 tsp Garlic Powder
1/2 tsp Ground Chipotle Pepper
Preheat oven to 450°
Combine oil, salt, garlic powder and pepper in a large bowl
Add potatoes and toss to coat
Spray rimmed baking sheet with cooking spray
Spread potatoes out evenly on baking sheet
Roast potatoes 25-35 minutes, stirring once or twice, until browned and fork tender
Yields 4 servings
